The Wellington Steak and Martini Lounge is a contemporary and intimate supper club located in the space formerly occupied by the Blue Lotus Lounge, adjacent to The Red Door Restaurant and Wine Bar. It is the fourth establishment for restaurateur Ric Libiran and the second as part of Red Door Epicurean, LLC. With a lifetime in the restaurant industry, Ric opened his first restaurant, Market St. Café & French Bakery, five years ago in San Marcos followed by, Café Bleu three years later and The Red Door Restaurant in July of this year.
The kitchen is under the direction of Executive Chef Partner Brian Johnston, who maintains his role as Executive Chef of The Red Door. Johnston studied in France at La Varenne Ecole de Cuisine and was formerly executive chef at the Star of the Sea Room and chef de cuisine at El Bizcocho. Johnston's resume also includes culinary experience at Top O' the Cove and Mille Fleurs.
Chef Brian’s menu features his exquisite sauces as a compliment to traditional steaks, chops, fish and his signature dish, beef Wellington.
